Kickstart Your Morning with our Endometriosis-Friendly Breakfast Recipe: Smashed Avo

Looking for a yummy breakfast idea that's endometriosis-friendly and will kickstart your day? Our Endo Smashed Avocado Toast recipe is a favourite in our household. Packed with anti-inflammatory ingredients including grainy sourdough, smoked salmon, avocado, and dukkah, it's not only delicious but also supportive for endometriosis.

Smashed Avocado on Toast with Smoked salmon, Dukkah and Feta

Ingredients:


  • 1-2 slices wholegrain sourdough

  • 50g smoked salmon OR 2 eggs

  • Avocado, smashed

  • Feta cheese

  • 1 tablespoon dukkah

  • Drizzle of balsamic glaze

  • 5-6 cherry tomatoes, sliced

  • Handful of rocket


Instructions:


  1. If using eggs, cook them as per your preference. You can scramble, fry, poach, or boil them. Set aside once cooked. If using smoked salmon, ensure it’s ready to go. Simply slice it if necessary and set aside.

  2. Place the slices of whole-grain bread into the toaster and toast until they are golden brown and crisp.

  3. While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth. Add a pinch of salt and pepper to taste.

  4. Once the bread is toasted, spread an even layer of avocado over each slice. Sprinkle the crumbled feta cheese over the avocado and top with cherry tomatoes and a handful of rocket leaves.

  5. Place the smoked salmon slices or the cooked eggs on top of the toast. and sprinkle a dukkah evenly over both slices of toast and d rizzle balsamic glaze over the top for a touch of sweetness.
